From davidg@eden.rutgers.edu Wed Jun 25 15:58:13 1997 Date: 22 Jun 1997 20:28:03 -0600 From: Dave Newsgroups: rec.food.recipes Subject: Pork Spareribs in Honey and Soya Sauce Followup-To: rec.food.cooking submitted by: LeiG@aol.com SPARERIBS OF PORK IN HONEY AND SOYA SAUCE SOURCE: Life and food in the Caribbean by Christine Mackie serves 4-6 fresh ginger 3-4 tablespoons white rum 8-12 pork rib rack or 2-3 ribs per person vegetable oil 2 garlic clove, crushed 2 cm (3/4) inch of peeled, fresh ginger, crushed 2 tablespoon clear honey 3-4 tablespoons of light soya sauce 3-4 tablespoons water 2 scallions, white and green chopped and separated 1 tablespoon of Chinese five star powder(ground black pepper, anise, fennel, cinnamon and cloves) or Allspice or cloves may be substituted. Preset the oven to moderate(about 350 deg F).Rub white rum into spare ribs and pour over a little vegetable oil. Line a roasting pan with foil. Put the rack of ribs into the oven to roast. When the ribs are cooked and becoming crisp, remove them and separate into single ribs. In a small pan put 1 tablespoons of vegetable oil and fry 2 cloves garlic and the ginger. Add clear honey and light soya sauce and water.. Taste and adjust to taste. Now add the 5 star powder. Stir together well for a minute and remove from flame. Add the separated ribs. Turn over or brush on till coated in the sauce. Return to roasting pan.
