From LeiG@aol.com Wed Jun 25 15:56:20 1997 Date: 15 Jun 1997 19:53:48 -0600 From: LeiG@aol.com Newsgroups: rec.food.recipes Subject: Pork Shish Kabob Followup-To: rec.food.cooking PORK SHISH KABOB (Pincho arabe) Andalucia,Spain serves 4 If low fat is a concern, substitute chicken or turkey for the pork Marinade: 2 cloves garlic,peeled 4 tablespoons chopped onion 1 teaspoon ground cumin 1/2 teaspoon crushed red pepper 3 tablespoons chopped fresh cilantro 1/4 cup water salt to taste 1/2 cup olive oil 1 pound lean pork, cut in 1 inch cubes 4-6 cherry tomatoes 4-6 slices bread In a food processor or blender, mix all ingredients except the olive oil, tomatoes, and bread. with the motor running,add the oil in a thin stream until the mixture is smooth. Place the meat in a bowl and pour the marinade over it to coat it well. Set aside, covered, in refrigerator, for about 2 hours. Thread the pork cubes on 4 - 6 small skewers. Top each skewer with a tomato. cook the kabobs over an outside barbecue or under a broiler, basting frequently with the reserved marinade, until meat is tender.
