Barbecued Ribs By: Dairy Diary 1996 Yield: 4-6 servings 1.4 kg pork spare ribs MARINADE: 6 tablespoons hoi sin sauce 50 g soft brown sugar 1 tablespoon sherry 2 tablespoons oyster sauce 2 teaspoons lemon juice 1 teaspoon sesame oil 1 teaspoon five spice powder Mix all the marinade ingredients thoroughly and reserve about 3 tablespoons. Caoat the ribs generously with the remaining marinade, then cover and leave for at least 5 hours, preferably overnight. Prepare barbecue. Cook over coals (medium heat) and turn occasionally for about 30 minutes. Serve with the reserved marinade. Alternatively these can be oven baked for 35 minutes at 190 C / 375 F / Gas 5. Mango and Lime Marinade 8 tablespoons mango and lime chutney; or mango chutney 1 lime 2 tablespoons honey; optional Chop the lime in half, remove the peel, keep the juice and flesh. Add the lime and chutney to a food processor bowl. Pulse until the lime is fairly well chopped up, it will probably still be chunky, it doesn't have to be very smooth. Pour this into the bowl where you'll be marinating the meat, add the honey and mix well. Stir in the meat. Marinate for at least 24 hours, longer if the meat is not very tender. Teriyaki Marinade 4 tablespoons olive oil 4 tablespoons soy sauce 4 tablespoons sherry 1 tablespoon fresh ginger; grated 1 clove garlic; chopped 2 tablespoons molasses Mix all ingredients except the molasses and marinate the meat for 4 - 6 hours or overnight. Take out the meat, stir the molasses into the remaining marinade and baste during the last 10 minutes of cooking. Beef Marinade 250 ml salad oil 175 ml soy sauce 125 ml lemon juice 4 tablespoons Worcestershire sauce 4 tablespoons mustard; prepared 1 tablespoon pepper 2 cloves garlic; crushed Mix all the ingredients together. Use to marinate beef. Reserve and use to baste meat while grilling.
