From westher@xs4all.nl Tue Apr 17 15:52:40 2001 Date: 10 Apr 2001 07:51:02 -0600 From: Esther Westerveld Newsgroups: rec.food.recipes Subject: Spinach, Mushroom and Egg Jackets Followup-To: rec.food.cooking, rec.food.recipes SPINACH, MUSHROOM AND EGG JACKETS 1 Tbsp olive oil 1 small onion, finely chopped 2 garlic cloves, crushed 175 g / 6 oz mushrooms, thinly sliced 225 g / 8 oz fresh spinach 3 Tbsp mascarpone cheese 2 hot baked potatoes 2 small eggs 2 Tbsp grated vegetarian Parmesan seasoning Heat the oil in a pan and fry the onion and garlic for 3 - 5 minutes until softened. Add the mushrooms and continue to cook until golden. Season. Pile in the spinach and cook gently until wilted. Simmer for 3 - 4 minutes until the liquid has evaporated, add the mascarpone and cook for 2 minutes. Cut a cross in the top of each potato and squeeze to open. Fluff up the flesh with a fork. Spoon in spinach mixture, making a hollow. Crack an egg into each well, season, and cover potatoes with foil. Return to the oven and cook for 10 - 15 minutes until the whites are set. Serve sprinkled with Parmesan.
