Drain and set aside. Heat a wok until hot. Swirl in oil, and toss in preserved cabbage, garlic and ginger. Stir-fry for 1 minute. Add mixed vegetables and dried soy-bean curd, if using. Pour in cooking wine, chili-bean sauce, soy sauces, sugar and water. Add noodles, mix well, reduce heat and simmer for 3 minutes.
