Cheese and potato casserole: Thinly slice 2 large baking potatoes. Slice or grate half a packet of cheddar cheese. Open a can of chopped tomatoes. Open a bottle of red wine (optional). Put a thin layer of tomatoes, potatoes and cheese in a deep casserole dish. Repeat layers until you run out of ingredients. Add a good glug of wine, season with pepper (but no salt). Cover. Put in the oven at a lowish temperature (gas mark 3). Go to the pub. Drink two pint of beer (optional). Return from the pub about one and a half hours later - the potatoes should be soft. Eat. Variations: if you're feeling piggy, use more cheese. If you're feeling fat, use less cheese and more tomatoes and potatoes. Experiment with differing quantities of cheese, tomato, potato and wine to achieve perfection. You could add pretty much anything (I've tried adding bacon, sliced onion, chopped rosemary, cooked chicken etc etc), you can serve with crusty bread or salad. Though I tend to go for the basic recipe, on its own. Serves 2.
