From janic412@aol.com Thu Jan 31 12:39:43 2002 Date: Thu, 31 Jan 2002 03:23:42 +0000 (UTC) From: JANIC412 Newsgroups: rec.food.recipes Subject: Cabbage Dishes (2) Collection Followup-To: rec.food.cooking, rec.food.recipes Cabbage Casserole Cabbage Casserole Both are frequently prepared: Cabbage Casserole 1 medium cabbage, cut into wedges 1/2 cup heavy cream may need more if using a lot of cabbage 1/3-1/2 cup melted butter 3 eggs, beaten Salt and pepper to taste Bread crumbs about 1/2-3/4 cup Cook the cabbage in salted, boiling water 8-10 minutes; drain and cool. Chop into medium pieces and mix with the cream, butter and eggs, salt and pepper to taste. Pour mixture into a baking dish, sprinkle the top with bread crumbs and bake at 350: for 30-40 minutes. Cabbage Casserole 1 small to medium cabbage coarsely chopped 1 medium onion, chopped 1 stick butter, divided into half Salt and pepper to taste 1/2 cup mayonnaise 1 can cream of mushroom soup 1 cup grated cheddar cheese 1/2-3/4 sleeve Ritz crackers or use any type of butter crackers, finely crushed Place the cabbage in a casserole dish, sprinkle onion over the cabbage. Melt 1/2 of the butter and pour over the cabbage. Season with salt and pepper. Melt the other 1/2 of the butter. In a small bowl, mix the mayonnaise and soup and pour over the cabbage. Mix the melted butter, cheese and cracker crumbs and sprinkle over the cabbage. Bake 350: for about 45 minutes or until the top is golden brown and the sides are bubbly. I sometimes just mix all except the topping, pour into the baking dish then add the topping-works just as well.
