I didn't make the whole amount, so I cut back on the ingredients. Worked well. Lemon-Roasted Potatoes Source:- Jo Seagar Approximately 24 small new potatoes, scrubbed grated rind and juice of two lemons 3 Tbsp olive oil 1 tsp flaky salt, (Maldon or sea salt) 1 Tbsp chopped parsley freshly ground black pepper Preheat oven to 220 C. Wash and dry the potatoes on a clean tea towel or paper towels. Mix the oil, lemon juice and lemon rind in a large roasting dish. Toss potatoes in the mixture, shaking the dish to evenly coat. Sprinkle generously with salt and cook for approximately 30 to 35 minutes, until golden brown and crisp. Stir once or twice during cooking.
