This has the predominant herbal flavour and delicious flavour of Thai Basil. 3 Tbsp vegetable oil 5 cloves garlic, finely chopped 250 gm fresh chicken, pork or prawns, or a mixture cut into bite sized pieces 3 cups cooked rice, preferably chilled overnight 1 Tbsp chopped fresh chilli 1 Tbsp sugar 1+1/2 Tbsp fish sauce 1+1/2 Tbsp soy sauce 3 Tbsp chopped shallots 5 Tbsp fresh basil leaves 1 Tbsp chopped fresh coriander Stir fry garlic and shallots in vegetable oil until golden. Add chilli and chicken and stir fry until cooked. Add cooked rice, sugar, fish and soy sauces, stirring and tossing gently. Add basil leaves and coriander and cook for another minute.
