From not@atthisplace.com Fri Sep 28 11:17:23 2001 Date: Fri, 28 Sep 2001 01:16:58 GMT From: Timmy Higgins Newsgroups: uk.food+drink.indian Subject: Pepost: Curries fr4om off the beaten path --7 Australia Banana Curry Serves 4 - 6 2 tablespoons oil 1 tablespoon (or more) red curry paste 3 bananas, thickly sliced 1/4 cup lime juice 1 onion, sliced 500 g chicken breast fillets, sliced into strips 250 g green beans, sliced 1 medium eggplant, chopped 1 teaspoon chicken stock powder 1/2 cup water 1 cup (250 ml) low fat coconut cream 2 tablespoons shredded basil 2 cup white rice, cooked Heat oil in pan, add half the curry paste and half the bananas, toss until coated. Remove from pan, pour over lime juice. Add remaining curry paste and onions to the pan. Cook until onions are soft. Add chicken and cook until golden brown. Stir in beans, eggplant, water and stock powder, simmer for 10-15 minutes. Stir in coconut cream, simmer until just thickened. Add banana mixture. Mix through remaining bananas, allow to heat through. Sprinkle with basil and serve with rice. Recipe courtesy of Australian Banana Growers' Council Inc. http://www.abgc.org.au/ ******Bonus Recipe******* OZ Fruit Chutney 4 Lb Apples 2 Quarts Vinegar 2 Lb Pears 1 Teaspoon Cayenne 3 Lb Tomatoes 1 Teaspoon Cloves 1 Teaspoon Peppercorns 1 Lb Raisins 1 Tablespoons Salt 4 Lb Sugar 1 Teaspoon finely grated Ginger Peel and core the apples and pears, skin the tomatoes and dice the lot into small pieces then place all the ingredients in a boiler and cook at a steady simmer for 2 hours. Bottle whilst hot, allow to cool then seal
