From jane.willis@ntlworld.com Mon Dec 3 12:59:33 2001 Date: Mon, 26 Nov 2001 05:47:51 -0000 From: Jane Willis Newsgroups: uk.food+drink.indian Subject: Ayam Panggang specially for Si 1 chicken, cleaned and quartered 4 cups thick coconut milk 1 stalk lemon grass, crushed 3 bay leaves ground ingredients; 6 small onions or shallots 4 cloves garlic 10 candlenuts (available in some oriental stores - if you can't get them use about 15 macadamia nuts, unsalted if possible) 1 dessertspoon ground coriander, dry-fried 1 tablespoon salt 1 tablespoon brown sugar Whizz all the ground ingredinets in a whizzy thing until as finely ground/mushed as possible and mix into coconut milk. Add everything else except the chicken. Bring to boil, stirring, reduce heat and cook until the oil separates. Add chicken. Cook until the chicken is very tender and there is only a little grave left. Remove chicken and grill or barbecue, basting with a little of the gravy. Pour remaining gravy over and serve. until browned Jane
