Cabbage and Ginger Stir-Fry (serves 6 as side dish) 1/2 Chinese cabbage or 1/2 head white cabbage, finely shredded (including hard white stems) 2 tablespoons oil 1 medium onion, chopped 1 inch piece of fresh ginger, cut into fine julienne strips 1 tablespoon fish sauce 2 dried kaffir lime leaves 1 fresh red chilli, seeded and sliced Heat oil in saucepan and fry onion and ginger over moderate heat for 1 minute. Add cabbage, fish sauce and lime leaves. Mix well, cover and simmer for 5-7 minutes, stirring occasionally.
