Somerset Brie Salad Source: Dairy Diary 1997 Serves 4 3 rindless Lean bacon rashers 5 tbsp Olive oil 2 crushed Garlic cloves 2 tbsp White wine vinegar 2 tsp French mustard 6 medium, sliced Fresh plum tomatoes 350g (12 oz) Somerset Brie Fresh basil or oregano - to garnish Fry the bacon until crisp. Cut into small pieces. Make the dressing by whisking the oil, garlic, vinegar and mustard together. Slice the tomatoes in half again. Arrange the brie and tomatoes in an ovenproof dish, sitting upright against each other. Preheat the grill on medium to hot heat. Pour half the dressing over the tomatoes. Place under the grill and cook for about 3 minutes until the brie starts to melt and bubble. Add the remaining dressing, then garnish with the bacon pieces and herbs and serve straight away.
