Tomates a la Provencal Cook Time: 25min 3 lb. tomatoes salt and pepper 2 tsp. thyme (dried) 1 tsp. rosemary (dried) 3 Tbs. olive oil 4 cup garlic 1 bunch parsley 2 Tbs. breadcrumbs Preheat the oven to Gas Mark 6. Wash the tomatoes and cut in half. Place them, flat side up, in a buttered ovenproof dish. Sprinkle each half with salt, pepper, thyme and rosemary. Pour the olive oil over them and bake for 15-20 minutes. Peel and finely chop the garlic and chop the parsley. Mix together with the breadcrumbs. Take the tomatoes out of the oven and increase the heat to Gas Mark 9.Sprinkle each tomato half with a heaped tsp. of the garlic, parsley and breadcrumbs mixture. Return to the oven for 5 minutes or until the tops are brown.
