Place the dried mushrooms in a bowl and cover with warm water. Set aside to soak for 20 - 25 minutes. 2. Drain the mushrooms and squeeze out the excess water, reserving the soaking water. remove the stalks and tough centers and cut the mushrooms, tofu (bean curd) and bamboo shoots. 3. bring the stock or water to the boil in a large saucepan. Add the mush- rooms, tofu (bean curd) bamboo shoots and peas. Bring back to the boil, lower the heat and simmer for 2 minutes. 4. Mix together the soy sauce, vinegar and cornstarch with 2 tablespoons of the reserved mushroom soaking liquid to make a smooth paste. Stir paste into the soup, together with the remaining mushrooms soaking liquid. Bring to the boil and season with salt and plenty of pepper. Simmer for 2 minutes. 5. Ladle the soup into individual warm bowls with a few drops of sesame oil in each and serve. - - - - - - - - - - - - - - - - - - Nancy
