Add chicken and cook until chicken is done. Add pepper, fish sauce and coconut milk and bring to a boil. Add green onion and remove from heat. Serve with rice. Coconut milk, dried kha and lemon grass may be purchased at an Oriental Market. Chicken in Coconut Soup 1 cup sliced chicken breast 2 cup coconut milk 2 Tbsp. fish sauce 1 chicken bouillon cube 2 Tbsp. lemon or lime juice 1 Tbsp. sliced kha Cilantro Cook chicken in coconut milk. Add sliced kha (can buy dried in Asian market). Cook until chicken is tender. Season with fish sauce and lime juice. Sprinkle top with cilantro. (Can substitute salt to taste for fish sauce.) Thai Coconut Soup 1 (13 oz.) can coconut milk 1 (13 oz.) can chicken broth 2-3 stalks lemon grass 2 citrus leaves 5-6 Thai red chili peppers, diced 3 scallions, diced 1-2 chicken breasts, boneless, cut into small pieces 1 Tbsp. red chili pepper sauce 2 Tbsp. fish sauce 2 Tbsp. fresh lime juice 1/4 cup fresh cilantro, chopped Simmer first 7 ingredients (up to and including raw chicken) for about 15 minutes. Add chili sauce, fish sauce and lime juice. Turn off burner and allow to sit awhile before serving. Add fresh cilantro just before serving.
