My favourite Thai soup is "Tom Ka Gai" (chicken and galangal soup). Tom Ka Gai (Chicken and Galangal Soup) 2 cups Coconut milk 1-1/2 cup Water 1/4 cup Galangal sliced very thin 1 tbsp Lemon grass sliced very thin 4 Lime leaves whole 1/2 tsp Chili paste 1/4 tsp White pepper 1 lb Chicken breast skinless and boneless sliced 1/4" thick 1 tbsp Fish sauce 1 tbsp Lime juice 3 tbsp Coriander leaves Directions Place coconut milk, water, galangal, lemon grass, lime leaves, chili paste and white pepper in a saucepan and bring slowly to a boil. Do not heat to strongly or coconut milk might curdle. When stock is boiling, add chicken, reduce heat and simmer for 20 minutes. Remove lime leaves, add fish sauce and lime juice.
