Stir in flour. Cook, stirring for 1-2 minutes. Add the broth. Simmer, covered for 10 minutes, Stir in sherry. Preheat broiler. Place the toasted bread on a baking sheet and sprinkle with cheese. Broil until cheese is melted. Divide soup evenly into 6 serving bowls. Float a piece of cheese toast in each bowl.
