From kate.heeringa@gmail.com Wed Feb 1 11:07:05 2006 Date: Tue, 31 Jan 2006 23:11:38 +0000 (UTC) From: Kate Heeringa Newsgroups: rec.food.recipes Subject: Seafood Soup with Basil Mayonnaise Followup-To: rec.food.cooking, rec.food.recipes *Seafood Soup With Basil Mayonnaise * Yield: 4 Servings 650 g mussels 2 Tbsp olive oil 2 md leeks (700g) thickly sliced 1 garlic clove, crushed 2 bay leaves 2 celery sticks, chopped 1 1/4 l fish stock (5 cups) 850 g tomatoes (2 x 425g) can/tins 1/2 cup white wine, dry (125ml) or fish stock 2 Tbsp tomato paste 2 tsp sugar 500 g fish fillets, firm, white & thickly sliced 2 Tbsp parsley, freshly chopped 1 basil mayonnaise 3/4 cup mayonnaise (180ml) 1/4 basil leaves, firmly packed, fresh Scrub mussels, remove beards. Heat oil in pan, ad leaks and garlic; cook, stirring until leeks are soft. Add bay leaves, celery, stock, undrained crushed tomatoes, wine,paste and sugar to pan; simmer covered, 15 minutes. Add seafood; simmer,uncovered, about 5 minutes or until seafood is just cooked through. Stir in parsley, serve with basil mayonnaise Basil Mayonnaise Blend or process mayonnaise and basil until combined. Not suitable to freeze. Suitable to microwave. Recipe best made close to serving.
