Here is his recipe... Hot Sour Soup 6 oz lean pork sliced against the grain in thin 1 inch strips 2 tsp cornstarch 2 tsp soy sauce 4 cup chicken broth 6 white mushrooms cut in thin strips handful of bok choy leaves, sliced 1 tsp white pepper 2 Tbsp vinegar 1/2 tsp salt 1 Tbsp cornstarch dissolved in 3 Tbsp water 1 egg, beaten 1 tsp sesame oil 2 Tbsp finely chopped green onion mix meat with cornstarch and soy sauce and set aside to marinade. In a large pot, combine chicken broth and mushroom strips. Bring to boil over high heat. Add meat and bok choy leaves and while stirring bring to a second boil. Add pepper, vinegar and salt. Boil about 1 = minutes. Add dissolved cornstarch and stir until slightly thickened. Very slowly pour in beaten egg, stirring constantly. Add sesame oil, stir well and serve immediately.
