From ynnuf@clear.net.nz Mon Jan 21 12:49:52 2002 Date: Sun, 20 Jan 2002 15:14:36 +0000 (UTC) From: Doreen Randal Newsgroups: rec.food.recipes Subject: Creamy Pumpkin and Bacon Soup Followup-To: rec.food.cooking, rec.food.recipes CREAMY PUMPKIN AND BACON SOUP 6 rashers bacon, rind removed and chopped 1 large onion, finely diced 2 tsp crushed garlic 1 Tbsp oil 750g pumpkin, peeled and chopped 2 large potatoes, peeled and chopped 3 cups water, blended with 3 tsp powdered chicken or bacon stock 1/2 cup finely chopped fresh herbs 1/2 cup thickened cream Salt and pepper to taste Sour cream and fresh herbs to serve Heat a large saucepan over a moderate heat. Cook bacon until lightly browned. Set aside. Add the onion and garlic to the pan with the oil. Cook 3 - 4 minutes. Add pumpkin and potatoes. Cook for 5 minutes, then add the powdered stock. Cover and cook 20 minutes, or until vegetables are tender. Puree soup using a blender or beat with a hand beater. Stir through bacon, herbs and cream. Season to taste.
