Sauteed Scallops on Red Pepper Sauce Originally posted by Debi Rausch: Ingredients 1 head garlic, peeled and minced Frylight 1 Lg. red bell pepper, peeled 1 tsp. olive oil 1 Tbsp. non-fat plain yogurt 1 Lb. sea scallops 1 C non-fat plain yogurt 1 Tbsp. dry vermouth 1/4 C fresh torn cilantro 2 Tbsp. lemon juice Black Pepper to taste Cilantro leaves for garnish 1 Tbsp olive oil Directions Make the Sauce: Place the garlic, pepper, and 1 Tbsp. yogurt in food processor and process til smooth. Scrape mixture into a bowl and stir in remaining yogurt, cilantro, and black pepper. Whisk in the olive oil then spoon the sauce onto plates, spreading evenly with back of spoon. For the Scallops: Spray a med-sized skillet with Frylight. Add olive oil and heat til hot but not smoking. Add scallops and quickly saute over high heat til just cooked through, turning often (2-3 minutes). Pour in the vermouth and let it almost evaporate, then add the lemon juice, cooking a few seconds longer so scallops are glazed. Spooon scallops onto the plates with the sauce and sprinkle with a few fresh cilantro leaves. Serve immediately Comments Yummy and low-fat too!!
