Dry with paper towels and set aside. Heat oil in a skillet and add onions. Sauti until pale yellow in color. Add the garlic, tomatoes, wine, water, salt and pepper, stirring. Add the oregano and capers and cook for 15 - 20 minutes, or until sauce has thickened. Add parsley and cod and simmer for 20 minutes, or until fish is tender and flaky. * Exported from MasterCook * Salt Cod with Tomato Sauce Recipe By :Antonio Carluccio Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound salt cod -- soaked, rinsed an drained 1/4 cup olive oil 2 cloves garlic -- chopped 1 pound crushed tomato salt and pepper to taste 8 fresh basil leaves Cut the fish into 2 inch pieces then place in a large skillet with enough water to cover. Bring to a boil, reduce heat and simmer 25 minutes. Drain and arrange in an ovenproof, covered, casserole. Set aside. Preheat oven to 350 degrees. Heat the olive oil in a large skillet and fry the garlic for just a few seconds. Add the tomatoes, salt and pepper. Cook, stirring occasionally, for 10 minutes over medium heat. Add basil leaves and stir. Pour tomato sauce over fish. Place in the oven and bake, covered, for 30 minutes. Remove the cover and continue baking 30 minutes longer.
