Hi Buzzers   I have three recipes all similar. This is one. The only difference is that I cook my trout with butter in foil in oven to ensure it's cooked through. I like to serve it with horseradish sauce and saute potatoes.   4 trout cleaned with heads and tails intact salt and pepper 75g (3oz) butter 50g (2oz) flaked almonds juice of one lemon to garnish: lemon slices parsley sprigs   Season the fish with salt and pepper. Melt the butter in a frying pan, add the trout and fry for 6 mins each side until golden and cooked through. Arrange on serving dish and keep hot. Fry the almonds  in the butter remaining in the pan until golden. Add the lemon juice and spoon over the fish. Garnish with lemon and parsley and serve immediately.   Love   Badge xxx
