Served over everything -- meat, chicken, fish, or vegetables -- it is the signature condiment of Latin cooking and is used both as a marinade or a condiment. 2 cups parsley, leaves only - no stems 12 cloves garlic 1 teaspoon salt 1/4 teaspoon black pepper 1/4 cup vinegar or lime juice 1 cup olive oil Process all the ingredients into a smooth paste. Season to taste with coarse salt and freshly ground pepper.
