The Spanish translates as "beak of chicken' and refers to a small pointed chile that grows in Mexico named the 'Brid's Beak' pepper. I would guess that the name for the salsa originated from a dish that featured these little pointed peppers. I grew some in my garden a few years ago and I didn't feel they were as flavorful as jalapenos. * Exported from MasterCook * Pico De Gallo Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salsa Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 navel oranges 1 medium jicama 1 teaspoon salt 1 teaspoon cayenne pepper Use Navel oranges, peeled, sectioned and chopped.
