Hot peppers and fruits are a natural. The trend in the hot sauce industry is leaning more to flavorful, creative sauces rather than just hot. This award-winning recipe is especially appropriate for the holiday season. In fact we call it, Holiday Salsa. Holiday Salsa 1/2 onion, chopped 1/4 tsp. garlic, finely chopped 1/4 tsp. fresh ginger, finely chopped juice of 1 lime 1 jalapeno pepper, finely chopped (substitute habanero if desired) 1 cup fresh cranberries, chopped in blender or food processor 1 16-oz. can of peaches 2 tbs. cilantro, chopped 2 tbsp. grated coconut Saute onion until opaque. Add garlic and saute lightly. Add remaining ingredients and heat thoroughly. The colors in this salsa are great. We serve this over grilled chicken breasts but it is also good used as a condiment with any dinner. Have a very happy holiday from all of us at El Pass-o Cafe and Mad Pepper Co. www.bizinter.net/madpepco. ` ~~~ Rec.food.recipes is moderated; only recipes and recipe requests are accepted for posting.
