The orange juice and Vidalia onion are a perfect counterpoint to the hot peppers and give the salsa a naturally sweet flavor. Congratulations, Jason! 2 fresh tomatoes, peeled and chopped 1 average size Vidalia onion (important that you use a Vidalia onion), chopped 2 fresh hot banana peppers, finely chopped 2 fesh jalapeno peppers, finely chopped 2 fresh cayenne peppers, finely chopped 5 fresh thai dragon peppers, finely chopped 1 clove of garlic, finely chopped 1/4 bunch fresh cilantro, finely chopped juice of 1/2 orange 1/2 cup premium white vinegar 1. Place peeled and chopped tomatoes in a strainer and press on them gently with a paper towel to drain excess moisture. 2. Place all ingredients in a medium sized pot. 3. Bring to a boil, then let simmer for 8-10 minutes, stirring occasionally so that mixture does not stick. 4. Chill and serve on tortilla chips or on eggs. 5. Wash down with a cold IRON CITY beer! Second Prize! Peach-Coconut Salsa David and Judith Stone Madeira Beach, Florida The Stones' Peach-Coconut Salsa was the most unusual of all the entries. Its beautiful color and heavenly aroma make it an excellent salsa to serve with grilled shrimp or chicken breasts. We tried it both cooked, as in the instructions below, and fresh - we liked it equally both ways! Visit their web sites and sign up for their newsletter which features more delicious recipes from the Stones! 4 fresh peaches, peeled and chopped 1 onion, finely chopped 1/2 cup shredded coconut 1 Tbsp. chopped garlic 1/4 cup olive oil 1/4 cup chopped cilantro juice of one lime 2 Tbsp. finely chopped ginger 1 jalapeno, finely chopped 1. Saute the onions and garlic in the olive oil. Cook until onion is opaque. 2. Add the remaining ingredients and heat through, being careful not to overcook. Third Prize! Cherrie's Cheery Salsa Cherrie Andrews Raleigh, NC Cherrie's Salsa has a great, garden-fresh flavor! This is a lovely salsa with nicely balanced flavors and a pleasant bite of lime. 1 red tomato, diced 1 clove garlic, finely chopped 1/2 red onion, finely chopped 1 jalapeno, finely chopped juice of 1/2 lime 1 Tbsp. fresh cilantro, chopped 1. Gently mix all ingredients. 2. Let sit for 15 minutes before serving to allow flavors to blend. Honorable Mention We can honestly say that all the recipes were delicious! We received many wonderful recipes and it was very difficult for the judges to reach their decision. We also awarded a few more prizes than we had planned on, since all entries were so good!
