Tomato Salad with Basil By: Good Housekeeping Cookery Book Yield: 6 servings 750g ripe tomatoes; skinned and thinly sliced 9 tablespoons olive oil 3 tablespoons white wine vinegar 1 small clove garlic; crushed 2 tablespoons fresh basil; chopped salt and pepper Arrange the tomatoes on 6 individual serving plates. Place the remaining ingredients in a bowl or screw-topped jar and whisk or shake well together. Spoon over the tomatoes. Cover and chill in the refrigerator for 2 hours before serving.
