From rgrzy@ponyexpress.net Wed May 5 08:55:02 2004 Date: Mon, 3 May 2004 12:27:28 +0000 (UTC) From: ron g Newsgroups: rec.food.recipes Subject: Sausage and White Bean Salad Followup-To: rec.food.cooking, rec.food.recipes Sausage and White Bean Salad 1 can Northern Beans, drained and rinsed 1 Bell Pepper, diced 1 large Tomato, seeded and diced 1 medium Red Onion, diced 2 large Sweet Italian Sausages, cooked, cooled and cut into 1/2" thick slices Large Leaves of Loose Leaf Lettuce, washed, dried and set aside in fridge BASIL VINAIGRETTE: 3 Tbsp. Olive Oil 2 Tbsp. Red Wine Vinegar 2 Tbsp. Balsamic Vinegar 2 Tbsp. Lemon Juice 2 Tbsp. Grainy Mustard 2 tsp. bottled Garlic or 1 Clove minced 1-1/2 tsp. Sugar Salt and Coarsely Ground Black Pepper 1/4 cup snipped fresh Parsley or Cilantro Combine all vinaigrette ingredients and blend well with a whisk. Combine meat and vegetables except lettuce leaves. Pour dressing over salad and toss until everything is coated well. Put a nice lettuce Leaf on each plate you need for a salad serving. Spoon salad onto lettuce leaf on salad plate. Serve a few crackers and some Extra Sharp Cheddar Cheese sticks and whole Ripe Olives or Stuffed Green Olives to garnish plate salad is on.
