From gladysdinletir@superonline.com Wed Dec 1 12:26:08 2004 Date: Tue, 30 Nov 2004 14:27:07 +0000 (UTC) From: Gladys Dinletir Newsgroups: rec.food.recipes Subject: Salami, Bean And Avocado Salad Followup-To: rec.food.cooking, rec.food.recipes Salami, Bean And Avocado Salad BBC Good Food Serving Size : 4 Preparation Time :0:10 150 grams button mushrooms -- sliced 8 radishes -- sliced 1/2 small red onion -- thinly sliced 400 grams haricot or cannellini beans -- can, drained 4 Tbsp light olive oil 1 Tbsp wine vinegar or cider vinegar 1 garlic clove -- crushed 1 avocado 90 g peppered salami -- pack each slice cut into eighths Combine the ingredients In a bowl, toss the mushrooms, radishes, red onion and beans. In a separate bowl, mix together the olive oil, vinegar and garlic. Season with salt and pepper. Dress the salad Peel and stone the avocado and cut the flesh into chunks. Gently stir into the bean mixture with the salami and the dressing. Check the seasoning and serve.
