From list-reply@simpleinternet.com Fri Jun 16 11:59:41 2006 Date: Fri, 16 Jun 2006 03:52:32 +0000 (UTC) From: International Recipes OnLine Newsgroups: rec.food.recipes Subject: Boursin Potato Salad Followup-To: rec.food.cooking, rec.food.recipes Boursin Potato Salad submitted by butterflydog 3 to 5 pounds yellow potatoes boiled and skinned 1 pkg Boursin cheese ( about 5.2 ounces ) Mayonnaise to bind Dijon mustard to taste ( 1 to 2 tsp ) Olive oil ( 2 Tbsp ) 2 Tbsp chopped white onion 1 Tbsp Fines Herbes Chicken broth ( 1/4 cup or so ) salt and pepper to taste Needing to make a pot luck salad I wanted to create a unusual but great potato salad. This was very well received! While potatoes are cooking, mash cheese in the bowl and add about a cup of mayonnaise and mix well. Add some olive oil , Dijon mustard, and heated chicken broth and mix until dressing is creamy. Drain potatoes and when warm, peel and slice and add to dressing and mix well until potatoes are covered with dressing and add herbs and onions and mix well. Depending on how many potatoes one uses, add enough mayonnaise etc. Serve warm or well chilled. When chilled, the mixtures blend even better.
