My husband especially enjoys radishes in potato salad. Cook potatoes by your favorite method. When cool enough to handle, peel and chop or cube for salad. Fine chop celery. Shred or fine chop the radishes. Add to potatoes with the onion. Add enough mayonnaise to bind and make creamy. Add the mustard and salt and pepper to taste. Mix all well. Serve or chill and serve. Garnish with radish roses and some bits of grated radishes. Tastes best the day made but also delicious the next day.( radishes will be less crunchy ).
