From judi.radley@dial.pipex.com Sat Jan 1 19:12:38 2000 Date: Mon, 20 Sep 1999 08:14:45 +0100 From: Judi Radley Reply-To: pasta@onelist.com To: Pasta Subject: [Pasta] Cold Spicy Noodles From: "Judi Radley" Cold Spicy Noodles 1 lb buckwheat noodles or whole-wheat spaghetti 2 tablespoons sesame oil 2 cloves garlic, finely chopped 1 green bell pepper, thinly sliced 4 oz snow peas, sliced 4 oz daikon, thinly sliced 2 tablespoons light soy sauce 1 tablespoon cider vinegar 2 tablespoons Chinese chili sauce 2 teaspoons sugar 1/3 cup peanut butter or sesame butter 10 scallions, thinly sliced chopped peanuts or sesame seeds, to garnish In a large saucepan of boiling water, cook noodles according to package directions. Drain noodles, turn into a large bowl and toss with 1 tablespoon of the oil. Heat a wok until very hot. Add remaining oil and swirl to coat wok. Add garlic and stir-fry 5 to 10 seconds. Add bell pepper, snow peas and daikon. Stir-fry 1 minute until fragrant and peas are bright green. Stir in soy sauce, vinegar, chili sauce, sugar, peanut butter and 1/4 cup hot water. Remove from heat and stir until peanut butter is smooth, adding more water if needed. Add reserved noodles and stir to combine. Turn into a bowl and cool. Stir in scallions and sprinkle with peanuts.
