Title: Cobalt Cafe - Lime Cilantro Vinaigrette

    Yield: 1 1/2 cups

    1 Tbsp Minced shallot
    3 Tbsp Chopped cilantro
  1/3 c  Lime juice
    1 tsp Dijon mustard
  1/4 tsp White pepper
  1/2 tsp Minced garlic
  1/2 tsp Salt
  1/2 tsp Sugar
    1 c  Olive oil

In a food processor combine all ingredients except oil and process for
1 minute. With motor running, add oil in a slow, steady stream and
process until thick and creamy.  Refrigerate until ready to use.
