Ginger Vinaigrette 1 Tbsp Dijon Mustard 1 Tbsp fresh grated ginger 4 Tbsp chopped scallions 2 Tbsp chopped chives 1/2 tsp finely chopped garlic 2 Tbsp sherry or red wine vinegar freshly ground black pepper 1/2 cup olive oil 3 Tbsp water Put the mustard, ginger, scallions, chives, garlic, vinegar, and pepper in a mixing bowl. Blend well with a whisk. Add the olive oil slowly, whisking well as you do. Add the water, blend well.
