From folklore@home.com Wed Jan 12 16:12:11 2000 Date: Mon, 03 Jan 2000 18:14:10 -0800 From: Kevin Reply-To: pasta@onelist.com To: pasta Subject: [Pasta] Scallop Pasta From: Kevin (1 serving) INGREDIENTS: 1 Tbs. butter 1 Tbs shallots, minced fine 2 Tbs. leeks (white part only), minced fine 4 oz dry white wine 4 oz. heavy cream pinch cayenne pepper 6 oz. bay scallops (the small ones) 1/4 c. fresh peas, blanched 1 minute in boiling salted water 1 tsp. fresh chives, minced fine 1 T. roasted red peppers, diced 1 T. roasted yellow peppers, diced Cooked pasta (linguini or fettuccine) PROCEDURE: 1. Saute shallots and leeks in butter until soft. 2. Add wine and reduce by half. 3. Add cream and reduce until thickened. 4. Add remaining ingredients and cook just until scallops are done.
