From mmarina1@optonline.net Wed Jan 31 16:10:59 2001 Date: Tue, 30 Jan 2001 10:51:39 -0500 From: Mary Marina Reply-To: pasta@yahoogroups.com To: Subject: [Pasta] Linguini with Hot Garlic Shrimp and Sugar Snap Peas Subject: linguini with hot garlic shrimp and sugar snap peas 1 lb. large shrimp peeled and deveined 2 tea. lemon juice 4 cloves garlic, crushed 1/2 tea. crushed red pepper 1 1/2 cups small sugar snap peas, ends trimmed about 1/3 lb. or 1 lb. fresh asparagus, trimmed and cut into 2" pieces 3 T. olive oil, divided 9 oz. pkg. tomato and herb linguine, cooked, drained and kept warm or reg. linguine 10 oz. container contadina refrigerated light alfredo sauce or your own toss shrimp, lemon juice, garlic and red pepper in a small bowl; cover and let stand 15 mins. saute peas in 2 T. olive oil in a large heavy skillet over med. high heat until just tender, transfer to a serving bowl, and keep warm. heat rem. 1 T. olive oil in skillet; add shrimp mix. saute 4 mins. or until shrimp turn opague. stir in sauce; cook 1 mins or until hot. stirring constantly. toss with linguine and peas. makes 4 servings ------------------------ Yahoo!
