From orchidguy@tampabay.rr.com Mon Jun 27 16:49:57 2005 Date: Fri, 24 Jun 2005 20:55:46 +0000 (UTC) From: Orchidguy Newsgroups: rec.food.recipes Subject: Creamy Cajun Chicken Pasta Followup-To: rec.food.cooking, rec.food.recipes Creamy Cajun Chicken Pasta 2 lbs boneless skinless chicken breasts 1 lb smoked or cajun sausage blackening seasoning 1 medium onion chopped 3 cloves garlic minced 1 bell pepper chopped 2 stalks celery diced 3 cups cooked pasta , ( I like penne for this or bowties) 1 cup heavy cream 1/2 cup chicken broth or white wine 2 Tbsp butter 2 Tbsp extra virgin olive oil 1 zip lock baggie 1/4 cup parmesean cheese Cut chicken into bite sized pieces and place in ziplock baggie with the blackening seasoning , toss to coat, and slice the sausage. melt butter in a large skillet along with the olive oil, and heat till very hot add the chicken and sausage, and saute til golden brown add the garlic, onions bell pepper and celery, and saute till onions are tranlucent and slightly golden brown, and add the wine or broth, simmer till it is reduced by half , then add the heavy cream and continue to simmer until the sauce reaches a thick consistancy, add the cooked pasta and warm through and toss in the cheese, and mix well ....
