It is also very pleasing to the eye with all the different vegetables making for a colorful presentation. 2 Cups penne pasta 1 large zucchini 1 yellow bell pepper 10 asparagus tips 1/2 cup fresh wild mushrooms 1/2 cherry tomatoes Salt and freshly ground pepper DRESSING 1 Orange 1 teaspoon mustard (dijon preferable) 2 teaspoons olive oil Salt and freshly ground pepper CRAZYCOOK'S TIME: 25 minutes. 1. Start preparing pasta. 2. To make dressing, squeeze the orange to get about three tablespoons of juice. 3. Whisk together all dressing ingredients. Add salt and pepper to taste. 4. Cut the zucchini into strips 1/4 inch wide and 2 inches thick. Cut the top and bottom of bell pepper, remove the seeds and cut into 1/4 inch strips. Cut asparagus tips into 1 inch pieces and slice the mushrooms. 5. Blanch all the vegetables for about three minutes an then set aside in a bowl with cold water. 6. Drain the cold water and pat the vegetables dry. 7. Saute the mushrooms in a saute pan with some non-stick cooking spray for about 2 to 3 minutes. 8. Keep an eye on the pasta and plunge it in cold water as soon as it's ready. 9. Combine the dressing and toss with all the ingredients.
