From folklore@home.com Fri Jan 14 13:46:14 2000 Date: Fri, 03 Dec 1999 18:39:29 -0800 From: Kevin Reply-To: pasta@onelist.com To: pasta Subject: [Pasta] Ricotta and chard cannelloni From: Kevin __________________________________________________________ Pasta: Ricotta & Chard Cannelloni __________________________________________________________ INGREDIENTS: 2 T olive oil 1 onion, chopped 2 T chopped garlic 3/4 lb. red swiss chard, stemmed, chopped 2 15-oz. containers ricotta cheese 2.5 c. grated parmesan 1 26-oz. jar prepared tomato pasta sauce 12 lasagne noodles, cooked DIRECTIONS: Heat oil in large skillet over med. heat. Add onion, garlic; saute until translucent. Add chard, tossing until near tender. Transfer mixture to a large bowl; cool 10 min. Mix in ricotta and 1 c. Parmesan. Season with S & P. Spread 3/4 c. sauce over bottom of lasagne baking dish. Place 1 noodle on your work surface. Spread 1/3 c. filling over noodle. Starting at 1 short side, roll up noodle jelly roll style. Place filled noodle, seam side down, in prepared dish. Repeat with remaining noodles. Arrange in dish. Pour remaining sauce over cannelloni. This can be made 1 day ahead. Cover with plastic wrap and refrigerate; allow to stand at room temp for 30 min. before cooking according to recipe. Preheat oven to 350. Cover dish loosely with foil. Bake for about 45 min., until heated thru. Let stand uncovered 10 min. Serve, passing remaining 1.5 c. Parmesan.
