From folklore@home.com Fri Jan 14 16:49:21 2000 Date: Tue, 07 Dec 1999 19:49:29 -0800 From: Kevin Reply-To: pasta@onelist.com To: pasta Subject: [Pasta] Penne di Bosco From: Kevin __________________________________________________________ Pasta: Penne Di Bosco __________________________________________________________ INGREDIENTS: 1 1/2 oz. dried porcini mushrooms 3 c. boiling water 1 lb. penne 1/4 c. minced shallot 2 tsp minced garlic 1/2 lb. fresh exotic mushrooms, trimmed and chopped 1/4 c. butter 2 c. dry red wine 1 c. stock 1 c. heavy cream 1 c. freshly grated Parmesan 1 Tbsp plus 1 tsp truffle oil DIRECTIONS: In a small bowl soak porcini in 3 c. of boiling water for 30 min. Remove porcini, squeeze out excess liquid, and reserve soaking liquid. Rinse porcini to remove any grit and pat dry. Chop porcini. Line a sieve set over a bowl with a dampened paper towel or coffee filter and pour reserved soaking liquid through it. Boil your pasta. In a large heavy skillet cook shallot, garlic and mushrooms with S & P to taste in butter over moderate heat, stirring until mushrooms are tender. Add wine, stock, and porcini soaking liquid and boil until liquid is reduced by half. While pasta is cooking, add cream and porcini to wine mixture and boil sauce until thickened, about 5 min. Drain pasta, transfer to large bowl. Add sauce, Parmesan and truffle oil. Toss well. Season again and serve.
