From janic412@aol.com Fri May 16 15:02:15 2003 Date: 14 May 2003 12:13:40 GMT From: JANIC412 Newsgroups: rec.food.recipes Subject: Ricotta Stuffed Shells Followup-To: rec.food.cooking, rec.food.recipes This is one of the recipes that I use for vegetarian friends when they come for dinner: Ricotta Stuffed Shells Marinara sauce (either homemade which is best or sauce from a jar, just make sure that it does not contain anything from meat). 1 medium container ricotta cheese 1/2 cup freshly grated Parmesan cheese Fresh, chopped parsley Salt and freshly grated pepper to taste Handful of grated Mozzarella cheese plus some for the top of the stuffed shells 1 box of jumbo pasta shells, cooked as directed of the box Mix all ingredients except the cooked shells. Stuff the shells with the cheese mixture, place in an oven proof baking dish. Top with the sauce, sprinkle the reserved Mozzarella cheese over the top and bake in a 350: oven for about 1/2 to 3/4 hour or until they are heated through and the sauce is bubbly. If our guests eat eggs, I will add 1 or 2 beaten eggs to the cheese mixture but they can be omitted. I usually serve a big tossed salad with different salad greens, tomatoes etc. Garlic bread is always good too. For dessert, something light like a mousse.
