Basically I love pasta and I love mushrooms. I was reading the Moosewood coookbook and saw a soup, Hungarian Mushroom, that inspired me to make the following: 10 oz uncooked pasta (I like radiatore (pasta nuggets)or rotelle) 1 White onion 3 cloves garlic 1 tbs sweet basil 3 tbs paprika 8 oz plain yogurt 1/8 cup grated parmesean cheese 1 to 2 tbs olive or canola oil Cook the pasta, drain and set aside In a large pan heat the oil and add the diced onion and sliced mushrooms. After the onions start to sweat ad the crushed garlic. Cook until onions and mushrooms are tender. Add the drained pasta and sweet basil and mix well. Add the yogurt and paprika mix well and until mixtur is an even temprature. Top with cheese and serve. This takes about 15 to 20 minutes to prepare and was extremelly tasty.
