From larrya@dingoblue.net.au Tue Aug 28 11:18:28 2001 Date: Sun, 26 Aug 2001 19:08:09 +1000 From: Larry Reply-To: Larry Newsgroups: rec.food.recipes Subject: Gourmet Vegetarian Pasta Followup-To: rec.food.cooking, rec.food.recipes Gourmet Vegetarian Pasta 12 Oz (300 gm) spaghetti or linguini 2 Tbsp. capers 5 med. tomatoes (blanched, peeled and mashed) 1 med. onion - chopped 1/2 red pepper - chopped 20 basil leaves - shredded 6 cloves garlic - chopped 3 Tbsp. tomato paste 8 whole black pitted olives 1/2 cup sliced black olives 2 Tbsp. olive oil 1 or 2 Tbsp. basil pesto 1/4 cup water Parmesan cheese ground pepper Fry onions, red pepper and garlic in 1 Tbsp. olive oil until onions clear. Add tomatoes, pesto, 1/4 of the shredded basil leaves, capers, tomato paste, olives and water. Simmer for about 20 minutes. Cook pasta as directed on package. When cooked, drain and toss with 1 Tbsp. olive oil and the rest of the shredded basil leaves. Serve with sauce over and topped with Parmesan cheese and ground pepper to taste. Serves 2.
