Thanks one and all! Creamy Fresh Tomato and Basil Sauce 1 1/2 lbs. (3 large) fresh tomatoes 1/2 cup chopped fresh basil 3 Tbsp. olive oil 2 Tbsp. balsamic vinegar 2 Tbsp. green onions, sliced 1/2 tsp. salt 1/4 tsp. ground black pepper 1 pkg. (16 oz.) penne pasta, uncooked 1 pkg. (5.2 oz.) cream cheese with garlic and herbs Use tomatoes held at room temperature until fully ripe. Core tomatoes and chop coarsely to make 4 cups. Place tomatoes in large bowl; add basil or parsley, olive oil, vinegar, green onions, salt and black pepper. Cook pasta according to package directions. Drain pasta; return to saucepan. Add cheese and reserved tomato mixture; stir until cheese melts and forms creamy sauce. Serve immediately.
