TIA. The traditional lamb gyro of the Mediterranean begins with ground lamb mixed with seasonings and then tightly packed into a large loaf of about 8 inches in diameter and 18 inches long. This loaf is then roasted in front of an electric element while the meat turns on a vertical spit. The meat is then sliced off the outside as it cooks. To make a great gyro at home without using ground lamb, I suggest you make the Souvlaki lamb recipe that follows and then slice the meat thinly and serve it in pita with Tzatziki sauce. * Exported from MasterCook * Souvlaki Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter 1/4 teaspoon dried thyme leaves 1 1/2 pounds boneless lamb -- cubed 1/4 teaspoon dried rosemary leaves 1 cup onion -- sliced 1 cube chicken bouillon 1 clove garlic -- crushed 4 pita breads 1/4 cup water 1 teaspoon salt 1/8 teaspoon pepper 3 tablespoons tomato paste 1/2 cup red wine 1 teaspoon dried oregano leaves ***garnish*** 1 small tomato -- sliced 4 slices onion -- (large) 1 cup lettuce -- shredded Saute the lamb in butter in a large saucepan in small batches until well browned all over (about 10 minutes). Remove the lamb as it browns. Add the onion and garlic. Saute for about 5 minutes. Return the lamb to the saucepan. Add the water and all the remaining ingredients except the bread and garnish. Bring to a boil. Reduce heat. Cover. Simmer until the meat is tender (about 45 minutes). Preheat the oven to 350F. Heat the pita bread until heated through (roughly 15 minutes). Split each loaf partway through. Fill with the lamb mixture. Garnish with tomato, onion and lettuce. Serve. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Tzatziki Sauce For Gyros Recipe By : Serving Size : 3 Preparation Time :0:00 Categories : Barbecue Sauce Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 small cucumbers salt -- to taste 1 1/4 cups yogurt -- plain 2 tablespoons olive oil 1 tablespoon lemon juice white pepper -- to taste 3 garlic cloves -- or more 1/4 cup fresh mint leaves *Use fresh mint leaves, shredded, 2 tablespoons dried mint, crushed or 1/4 cup coarsely chopped flat-leaf parsley. Use more or less garlic, minced, to your preference. Peel, seed and dice cucumbers. Sprinkle with salt and set aside to drain. Combine yogurt, olive oil, fresh lemon juice, pepper and garlic in large bowl. Cover and refrigerate. Just before serving, beat yogurt sauce with wooden spoon until smooth. Have fresh mint torn into small pieces. Dry cucumber by gently squeezing between paper towels. Combine cucumbers with mint leaves and yogurt mixture. Add salt and pepper to taste. Use with Gyros of all kinds.
