In bowl mash together meat, thyme and sage. Divide into 4 portions. Wrap meat mixture evenly around each egg, sealing well. Place beaten egg in shallow bowl, bread crumbs in another. Dip each egg into beaten egg, roll in crumbs. Melt butter in skillet over medium-low heat Fry eggs, turning frequently, until brown on all sides. Enjoy, Bernie.
