Alpers" Newsgroups: rec.food.recipes Subject: Sopa de Lima - Lime Soup Followup-To: rec.food.cooking This was one of our favorite dishes while traveling through the Yucatan Peninsula, Mexico. Cindy Alpers Sopa de Lima (Lime Soup) 2 Tbsp butter 1 onion 4 tomatoes 1 sweet chili 1 Tbsp vinegar 1 tsp salt 4 cup chicken broth 3 tortillas oil for frying 2 limes Chop onion and chili fine and cut tomatoes into wedges. Saute the onion, tomatoes and chili in the butter until soft and lightly browned. Heat chicken broth in a large saucepan and add sauteed vegetables. Cut one lime into quarters and squeeze juice into soup mixture. Add the vinegar and salt. Meanwhile heat oil in a small frying pan. Cut tortillas into thin strips, fry in oil until crisp and allow to drain. Pour soup into bowls and sprinkle each bowl with tortilla strips.
