Onion chopped 2 cloves Garlic 2 lbs. Pork loin back ribs 32 oz. Jar of Nopalitos 28 oz.can Salsa de Chile Colorado(recipe below) 1/2 cup Water Season to taste In a large skillet heat oil and fry the ribs until golden brown. Add onions, garlic to mixture and saute for 2 minutes. Pour in Salsa de Chile Colorado, water, and season to taste. Continue to cook over medium to low heat 35-40 minutes, stir occasionally. Salsa de Chile Colorado 24 chiles, mild dried red, like New Mexico or Anaheim 4 Tbsp oil 10 garlic clove, minced salt, to taste 6 Tbsp flour Wash chiles, stem and seed. In a pot cover well with water and boil 10 mins. or until soft. Remove and drain reserving the liquid.. Place chiles in blender with reserved water, and puree until you achieve a pasty consistency. Heat oil in large skillet. Add garlic and flour and cook, stirring until flour browns. Add chile paste slowly to mix well with flour to a smooth paste. When all the chile paste is added, bring to a boil, stirring constantly. Cook until it thickens, 3-4 minutes. Thin with water to a thick, saucy consistency.
